Butternut Apple Soup 2

Ingredients

  • 1 tablespoon olive oil
  • 1 garlic clove peeled and chopped
  • 1/3 tablespoon ginger, peeled and grated
  • 1 cup pumpkin, peeled – seeds removed, chopped
  • 1/3 cup leeks, chopped
  • 1 ½ cups tomatoes, skinned and chopped
  • 1 cup Swiss chard, stems removed and coarsely chopped
  • 2 cups clean spring/borehole water

Instructions

  • Heat oil in a small saucepan over medium heat and sauté garlic and ginger very quickly
  • Add water and bring to a simmer then add the pumpkin and leek, allow to simmer for 3 minutes
  • Add tomatoes and simmer for 2 minutes
  • Add Swiss chard and heat through
  • Remove from the heat and Purée the soup with a food processor or blender
  • Return soup to the pot and heat through
