Warm Lentil Soup with Apples

Ingredients

  • 1 cup lentils
  • 3 cups apple juice
  • 2 cups water
  • 1 onion chopped
  • 1 carrot chopped
  • 1 apple chopped
  • 1 tbsp fresh ginger
  • 1 small red pepper chopped
  • 1 bay leaf
  • 1 small bunch sage
  • 1 tbsp cumin
  • 1 tbsp turmeric
  • 1 tsp cinnamon

Instructions

  • Put all ingredients in a large pot except potato, salt and pepper.
  • Bring to a boil and let simmer for about 45 minutes then add potatoes.
  • Cook for another 15 minutes or so and add salt and pepper.
  • Serve with brown rice or quinoa.
  • This soup is wonderful on a cold winter day.
  • From this soup you will get plenty of minerals, vitamins and protein. Add some kale to add good levels of vitamins and proteins.
