Digestive Support

Orange, Carrot Mint Soup, Spinach


  • 1 Tbsp. olive oil
  • ½ large onion, thinly sliced
  • 1 clove garlic, minced
  • 400g carrots, peeled and thinly sliced
  • 2 cups clean spring/borehole water
  • ½ cup baby spinach, stems removed and coarsely chopped
  • 1 tablespoon fresh mint, finely chopped
  • ¼ cup freshly squeezed orange juice


  • Heat oil in a small saucepan over medium heat.
  • Sauté onions until slightly translucent, then add garlic
  • Add carrots and water. Allow to simmer for 5 to 10 minutes until carrots are soft
  • Add spinach and mint and simmer for a minute
  • Stir in orange juice and remove from heat
  • Purée the soup with a food processor or blender
  • Return soup to the pot and heat through
