Spinach Garlic Fennel Soup


  • 1 tablespoon olive oil
  • ¼ cup onion, peeled and chopped
  • 4 garlic cloves peeled
  • 2 cups of clean spring/borehole water
  • ½ cup fennel bulb, coarsely chopped
  • ¼ cup carrot, peeled and thinly sliced
  • ½ cup spinach, stems removed and coarsely chopped


  • Heat oil in a small saucepan over medium heat and sauté onion and garlic, until onions are slightly translucent
  • Pour in water and add the fennel and carrots. Simmer for 5 to 10 minutes until veggies are soft
  • Stir in spinach and heat through
  • Remove from the heat and Purée the soup with a food processor or blender
  • Return soup to the pot and heat through
